Our small ecosystem

The vine is a climbing shrub whose natural posture is irregular. Man, for the purpose of cultivation, gave a harmonious line to the plant to follow during its growth. Our line is the Pergola Trentina, characterized by a good vegetation that protects the bunches from solar radiation and from which at the same time absorbs the vital energies.

The varieties we grow are those that reflect the tradition of Valpolicella including  Corvina, Corvinone, Rondinella, Teroldego and some Molinara spread around the vineyard.

Walking through the rows you will discover the vitality of the vineyard, among the differences between one variety to another, the many species of spontaneous plants that grow in the inter-row, the fruit plants grafted by my father and the biodiversity of the insects that inhabit this small ecosystem.

Within this environment we also find the olive grove with plants among the oldest in our village.

Philosophy

Harmony, this is our goal. Find harmony within our environment, trying to resume the rhythms of nature, without forcing or reducing them.

Probably a utopia to be achieved individually or a goal that might seem trivial a few decades ago, but trying is the first step.

We will therefore endeavour to discover a harmonian existens with our surrounding.

Our story

The two and a half hectares that today we call home, was purchased twenty years ago by Margherita’s father, (“Rossetti Enzo”) who, decided to buy the land that once, as a teenager, was his playground. He was born and raised in these hills, and this land was and still is a special place, which he loves.

Initially it was a completely virgin land, it only had some cherry trees while the rest was dense with wild vegetation. Yet Enzo saw a great potential for cultivating and generating agriculture. With this understanding, preparations begin, and the hill is immediately cleared of the bushes. The changes made so long ago, began to transform into the luscious plantation of vines that characterizes our reality today.

For us “Ai Dossi” has always been considered an earthly paradise, but the thought to share this experience as a touristic destination was an idea born by chance. About five years ago, as if it were the most natural thing in the world; Enzo proposed to his daughter that agriturismo be made available to the public. The intent behind this was to attain the necessary resources to continue to maintain and preserve the vineyard, whilst creating the opportunity to inspire others to relive their childhood outdoor adventures. At that moment, he let the words go without thinking about all the workload and responsibilities that such an activity entails.

And yet, it seems he undertsood perfectly the essence of life. That we ought to continue to live as we always have, following in the paths of our predecessors and their traditions. Ensuring that their teachings are handed down through the generations, in order to continue to cultivate all those products that are then the excellence of our territory; a nuance of what is called “Made in Italy” from the point of view of food and wine.
